BURRITOS AND BLACK BEANS

Black beans, dried or canned (2 cans)
Garlic cloves
Fresh onion
Green pepper
2 tbsp. olive oil
Flour burritos
Cheddar cheese
Mild or med. picante sauce
 
Cook black beans according to directions on package, if using dried. Saute garlic, onions, green pepper in 2 tablespoons olive oil; mix with either cooked dried beans or canned beans. Heat flour burritos until warm. Place black beans mixed with sauteed onion, garlic and green pepper on top of burritos. Sprinkle shredded Cheddar cheese over that. Spoon mild or medium picante sauce over that. Fold and enjoy.

We make these easy healthy breakfast burritos for breakfast and for supper. They are full of protein and taste great any time of the day. This recipe is versatile, and you can add any ingredient that is your favorite. It makes great leftovers for lunches the next day, saving you time and money.

Basic Breakfast Burrito Recipe:

2 lb breakfast sausage, from pasture raised pigs

12 eggs, from pasture raised hens

1-2 cups raw cheddar cheese, shredded

This is the simple basic recipe, for when you are in a hurry:

Crumble the sausage in a skillet and cook until done. Crack 12 eggs and stir in, stirring continuously to scramble in with the sausage. When the eggs are done, turn the heat to low and stir in the cheddar cheese. As the cheese begins to melt, cover with a lid and turn off the heat. This allows the cheese to keep melting without everything burning and sticking to the pan. Serve in butter fried tortillas and top with the toppings listed below.

Tater Tot Breakfast Burrito

While cooking the basic ingredients, sometimes I pop some tater tots in the oven on a greased cookie sheet to bake for about 20 minutes. When the eggs and sausage are done, I put half the tater tots and half the cheese in the skillet and mix. Then I add the rest of the tots and cheese, stir in, and cover to let the cheese melt.

Other Additional Ingredients:

Baked or boiled potatoes, cubed

Black beans

Refried beans

Lots of peppers and onions

Chorizo, a Mexican sausage

Toppings:

Sour cream

Guacamole

Avocadoes, sliced

Tomatoes, diced

Green sauce

The more ingredients you put in the burritos, the more variety it has and the more it bulks it up to have for leftovers. This gives you a variety of nutrients and saves you money by stretching the meal.

Breakfast Burritos

Ingredients:

1 1/2 lb. hot sausage
1 medium onion, chopped
1 medium green pepper, chopped
36 flour tortillas
1 dozen eggs, beaten
1 lg. shredded Cheddar cheese
1 1/2 lbs. frozen hash browns


Instructions:

Brown and drain sausage; scramble eggs, adding salt and pepper. Cook potatoes until soft. Saute onion and green pepper. Warm tortillas. Combine sausage, eggs, potatoes, onions, and pepper in large bowl. Put a scoop of mixture on each tortilla; add cheese; roll up, heat, and serve.

Chicken Burritos

1 lg. can refried beans (Del Rio or Fiesta: neither contains lard)
2 breasts of chicken, boneless
Salsa; 1 jar mild or medium
Peppers; green, yellow, red, diced
Tomatoes, diced
Lettuce, cut
Green onions, diced
Sour cream
Cheese, grated Cheddar or white cheese
Flour tortillas, burrito size

You may wish to prepare your own red beans, otherwise, use the canned beans. Bake chicken breasts, sprinkling Cajun seasoning on top if you wish. Cut chicken into bite-size pieces. Mix Salsa with beans. Place chicken and beans on tortilla and roll up. Put into rectangular Pyrex. Add more Salsa to top. Sprinkle with grated cheese. Before serving, microwave for 6-8 minutes, then turn dish and repeat for another 6-8 minutes. The cheese should be melted and the burritos "bubbly".

Condiments: Prepare first. Dice peppers, onions, tomatoes and lettuce. These items and sour cream are to be sprinkled on the burrito by each individual. Salsa: in a dish for those that enjoy more on top of burrito. Serves 6-8.

Steak Burritos

Ingredients:

2 lb. steak, all fat trimmed & cubed
1 sm. diced onion
1 diced tomato
1 sm. can tomato sauce
1 sm. jar taco salsa
1 pkg. taco seasoning
8 burrito shells
Sliced cheese


Instructions:

1. Brown steak in fry pan with little oil.

2. Add onion and tomato. Add tomato sauce, taco salsa and seasoning. Bring to light boil. Add flour to thicken into gravy.

3. After thickened turn to simmer. Warm burritos in a pan. Then put a slice of cheese and then meat. Roll to eat.

Beef Burritos

1 lb. lean sirloin steak, diced (or use ground sirloin)
1 tbsp. vegetable oil
1 (16 oz.) can pinto beans
3 c. peeled, chopped tomato
1 1/2 c. chopped onion
2 tbsp. Worcestershire sauce
2 c. chopped green chilies
6 flour tortillas
2 c. shredded white Cheddar or Monterey Jack cheese
1 1/2 c. shredded lettuce

Brown steak in oil in large saucepan; stir in beans, 1 cup tomatoes, 1 cup onion and Worcestershire sauce. Cook, stirring occasionally for 10 minutes. Meanwhile, bring chilies, 1 cup tomatoes and remaining onion to a boil in a small saucepan. Reduce heat and simmer 5 minutes.

Divide the meat mixture evenly among the tortillas, fold envelope style and place in a lightly greased baking dish. Top with cooked chili mixture and cheese. Bake in preheated 400 degree oven until browned, about 8 to 10 minutes.

Divide lettuce and remaining tomatoes among 6 large plates. Top with tortillas.

Serves 6.
